1 ea Unbaked Two Crust Pie Crust
3 c Gooseberries
3/4 c ;Hot Water
1 1/2 c Granulated Sugar
6 T Unbleached All Purpose Flour
1/4 t Salt
Line a 9-inch pie plate with the lower crust and set aside. Pick over the
gooseberries and then cook, with the water, for 5 to 10 minutes, or until
tender. Combine the rest of the ingredients, blending well, and add to the
gooseberries, mixing well. Cook, stirring constantly, until thickened.
Remove from the heat and let cool. Preheat the oven, while the berry
mixture cools, to 450 Degrees F. When the filling is cool, pour into the
pie plate and add the top crust, adjusting and sealing the two crusts
together. Bake in the hot oven, 450 Degrees F., for 10 minutes. Reduce the
heat to 350 Degrees F. and cook for another 35 minutes or until done. Cool
to room temperature before serving.
