2 lb Lean beef round stew meat
8 c Water
1 lb Suet, cut up
12 md Cooking apples, pared and
Cored
3 lb Seedless raisins
3 c Dried currents
1 c Candied orange peel, finely
Diced
4 t Salt
4 t Cinnamon
1 t Powdered allspice
1 t Ground cloves
2 c Sugar
2 c Brown sugar
1 c Molasses
8 t Lemon juice
2 c Apple cider
Boil beef in water. Cover and simmer 2 hours. Remove meat and reserve 4
cups of stock. Put meat, suet, apples through a food chopped. Put in
large, 7-8 quart, pan. Add remaining ingredients, except lemon juice and
cider. Add reserved stock and simmer uncovered 1 hour, stirring
occasionally. Add juices during last 5 minutes of cooking. Pack while hot
into sterilized jars. 1 quart will make a 9-inch pie (3 cups) with 1 cup
left over for cookies or tarts.
